Dal with Green Mango - Andhra Style

Ingredients
  • Toor dal -14 cup
  • Turmeric powder – 14 cup teaspoon
  • Sour, green mango (diced) -1
  • Green chillies – 3
  • Finely cut onions -14 cup
  • Salt – as required
  • Red chilli powder -14 teaspoon
  • Tamarind extract -1 tablespoon (optional)
For seasoning
  • Oil – 2 tablespoon
  • Cumin seeds -14 teaspoon
  • Mustard seeds -14 teaspoon
  • Urad dal -14 teaspoon
  • Curry leaves – 2 springs
  • Asafoetida powder – 2 pinches
Cooking Method
  • Wash dal and add enough water to cover it in Anantha CNB’ pressure cooker
  • Add turmeric powder, one teaspoon of oil, diced mango, chopped green chillies, onion and pressure cook for two whistles in medium flame
  • Heat oil in a ‘kadai’ fry the seasonings and pour it over dal
  • Add salt, chilli powder and boil for 2 more minutes
  • Serve hot with cooked rice
Variations
  • Instead of mango, anyone of the following can be used : Diced tomato, fenugreek leaves, any keerai, Andhra dosakai or ridge gourd
  • Tamarind extract can be added according to individual taste
  • Instead of red chillies, green chillies can be used for preparing for dal
Notes
  • Avoid tamarind extract if mango is very sour.
  • This dal should be thicker than sambar.
  • Dal should not be mashed. Consistent handling gives a good result.
